What is a wood fired pizza oven and how does it work? A wood fired pizza oven uses hardwood logs to generate intense, radiant heat inside a domed or arched chamber. The stone or refractory floor absorbs and stores this heat, cooking the base of your pizza from below while the dome radiates heat from above and the sides. This combination of direct stone contact and enveloping heat is what produces the light, crispy base, melted cheese, and charred crust that a conventional kitchen oven simply cannot replicate.

How long does a wood fired pizza oven take to reach cooking temperature? Reach time depends on the size and construction of the oven, as well as weather conditions and the quality of your wood. As a general guide, most countertop and medium-sized ovens take between 45 and 90 minutes to reach a pizza-cooking temperature of around 400–500°C. Softwoods burn hotter and faster, produce more smoke and sparks, and can impart an unpleasant resinous flavour to food. Avoid treated, painted, or chemically processed wood entirely, as these release toxic compounds at cooking temperatures. Good quality kiln-dried hardwood logs are widely available across the UK and make a significant difference to both performance and flavour.

What can you cook in a wood fired pizza oven beyond pizza? A great deal more than most people expect. Once a wood fired oven is up to full temperature, the intense heat is ideal for searing steaks, cooking whole fish, and roasting vegetables. As the fire dies down and the temperature falls to around 200–250°C, the oven is perfect for roasting chicken, slow-cooking lamb, baking bread, and preparing gratins or casseroles.
